Ageing: natural malolactic fermentation in steel tanks with a light break sur lies for 6-8 months.

Matches excellent for vegetable based dishes;  also excellent with meat based dishes and medium-aged cheeses.

Tasting Notes Intense ruby red color with purple hues. Vinous scent with notes of blueberry and plum, delicate lavors of elderflower. Warm, full and harmonious taste with excellent tannic-acid balance, light balsamic aftertaste with hints of underbrush.

Serve at 16-18°C.

Production Technique Red wine vinification in steinless steel vats with destemming and subsequent fermentation at variable temperatures ranging from 24 to 28 degrees, frequent manual punchings and at least two délestages per day. Fermentation on the skins for 8 to 10 days.
