Ageing sur lies for 30 months, manual riddling on racks. Disgorgement in March 2015.

Matches well with fish and shellfish based dishes. Also excellent as an aperitif.

Tasting notes:  with a fine and silky perlage; it presents delicate scents of bread crust, mineral notes and a mild hint of currant. In the mouth it is crisp, sapid and full-bodied. Supple, with a good balance between acidity and tanginess.

Production technique: vinification without the skins and soft pressing of the grapes. Low-temperature fermentation of the base wine. Refermentation in the spring following the vintage at a controlled temperature of 17° C.
